Incredible Banana Nut Muffins

A few of my friends have been placed on VERY restrictive diets by their physicians and really miss muffins so I set about the task of creating a muffin that tastes like the real thing but meets their needs. These are the result. They are gluten free, #dairyfree and no added sugar but don’t let that scare you. They are fantastic and that is coming from a lady that wants real butter and real sugar!

I ran this recipe by an independent group of tasters, my neighbors, and they all agree they are fantastic. Some of the comments include:

“If all gluten free, dairy free, sugar free tastes that good, I’m ready for it”

“I can’t believe how normal they tasted considering how many gluten free bakery items I’ve had in the past”

I do have a second version of this recipe for those that want the full sugar, full fat and regular flour version but after enjoying these, you may not miss the butter or sugar.

Ingredients:

¼ cup coconut oil

½ cup Pyure® Organic Stevia*

1 tsp ground cinnamon

¼ tsp ground ginger

¼ tsp cardamom (optional)

¼- ½ tsp ground cloves

½ tsp ground nutmeg

¼ cup unsweetened applesauce

5 overripe bananas, slightly mashed

2 eggs

1 ½ tsp pure vanilla extract

¾ cup gluten free buckwheat flour

¾ cup gluten free oat flour

½ tsp baking powder

1 tsp baking soda

1 tsp salt

1 cup walnuts, roughly chopped (optional)

Preheat oven to 340⁰F. Line a 12 well muffin tins with paper and lightly spray with non-stick cooking spray.

Cream together the coconut oil and Pyure® in large mixing bowl until fluffy. Add in spices, bananas, applesauce, eggs and vanilla. Blend on medium speed until well combined.

Add in flours, salt, baking soda and baking powder. Mix until just combined, scraping side of the bowl at least once.

Fill each well of the muffin tin almost to the top.

Bake for 25-30 minutes.

I currently do not recommend using this recipe to make a loaf as I have not tested that yet and #glutenfree products rise differently than regular quick breads.

*I tried this recipe with a few different brands of Stevia and Pyure® Organic Stevia had the least aftertaste.
